HOW TO COOK DRY BEANS: Soak overnight to soften the pinto beans and remove protective enzymes that are hard to digest. When you're ready, add the beans to a pot with your choice of additive ingredients and bring them to a boil. Turn the heat to low and simmer, covered, for 2-4 hours until beans are tender.
