Green lentils are low in calories but a strong source of protein, potassium, iron, and folate. These legumes add essential vitamins and minerals to your diet. Green lentils have a rich, peppery flavor. 

HOW TO COOK LENTILS: Rinse lentils under cold water. Then, add four cups of water for every one cup of lentils. Bring to a boil before simmering for 18-20 minutes. Drain & serve!
